Just thought I’d share a few of the homemade goodies I made this week.
I made the grilled steak, lobster tail, potatoes, and Averi’s favorite- asparagus on Monday night for dinner. Dropped by the local market and picked up the lobster (yum) and headed home to grill.
Just a little salt and pepper to taste with a dab of butter here and there. Added shredded parmesan, cheddar, and Colby for garnish. Ohhhh! It was so good.
Then Wednesday night I whipped up a crawfish casserole that melted in my mouth. Remind me to share the recipe with you later. In Louisiana, we love us some crawfish and it’s a plus if the tails are already picked out for you like these were. I mixed in some butter, onions, cream of mushroom soup, garlic, rice, some Creole seasoning, a dash of crab boil (Zararain’s), and a few other things. A little cheese on top, baked and it was delicious.
On Friday night, it was Chicken Masala. Sautéed chicken, cooking wine, seasonings and more. This stuff will make you hurt yourself if you like chicken.
I love to cook and love it when I get to cook for my family and use the freshest ingredients. I live in the country and one of the family usually has fresh chicken, beef, and fish in the freezer at all times. Add in homegrown and canned veggies and fruit and you are in for some super-healthy eating.
Nothing quite like a homegrown steak or catching fish for dinner. You should try it if you get a chance.
